Vanilla Ice Cream

My Low-carb Vanilla Ice Cream is simple, low-carb and easy to make. While it is easiest with a spinning ice cream maker, you can also blend it and freeze it. You can even mix in some cacao, chocolates, chopped berries or low-carb nuts at the end or when you serve it. 

Ingredients

  • ¾ cup vanilla almond milk (or unsweetened)

  • ¾ cup heavy whipping cream

  • ¼ cup keto-friendly liquid sweetener (Stevia, erythritol, allulose, monk fruit, or a blend — or to taste)

  • 1 teaspoon vanilla extract

Instructions

  1. In a bowl, combine all the ingredients . Mix well until fully combined

  2. Pour the mixture into your ice cream machine and churn until frozen and creamy, like soft-serve.

  3. Serve and enjoy!
