Ground Beef Coconut Curry & Rice (cauliflower)

Ingredients

  • 1 package ground beef (grass-fed preferred) (~1–1.5 pounds)

  • 1 tablespoon avocado oil (or coconut oil)

  • 3 cloves garlic, minced (about ½ tablespoon)

  • 1 tablespoon pink salt

  • 1 tablespoon onion powder (or ½–1 chopped onion)

  • 1 cup heavy cream (or coconut milk)

  • ¾ cup full-fat mayonnaise (use avocado oil mayo if available)

  • ¼ teaspoon cinnamon

  • 2 packages riced cauliflower (total of 24 oz = 3 cups; frozen is fine)

  • 3 tablespoons curry powder

Instructions

  1. Heat the avocado (or coconut) oil with the garlic over medium-high heat until fragrant. (If you're baking it as a casserole, preheat the oven to 350°F / 175°C.)

  2. Add the ground beef and cook until fully browned. Once it starts browning, add the salt and onion powder.

  3. While the beef cooks, prepare the riced cauliflower. If frozen, cook according to package instructions. If fresh, sauté in another pan until soft.

  4. Once the ground beef is fully cooked, add the riced cauliflower and mix well.

  5. Stir in the heavy cream and mayonnaise until fully combined.

  6. Add the cinnamon and curry powder. Mix thoroughly. You can add red pepper flakes to taste for heat.

  7. Serve as is, like a skillet dish.

    Optional baked version:

    1. Grease a baking dish with coconut oil, pour the mixture into the dish, and bake for 15 minutes. Top with mozzarella cheese if desired.
