Avocado Chocolate pudding

Ingredients

  • 1 frozen avocado (~1.5 C diced avocado frozen)

  • 1 C unsweetened almond milk

  • 3 Tbs cocoa powder

  • 6 Tbs powdered keto friendly sweetener (stevia, erythritol, nun fruit, or combination)

  • 2 Tbs ground chia seeds (ground)

  • ¼ tsp xanthan gum

Instructions

  1. In the glass of your blender, put the avocado and the almond milk. Beat until ingredients are well combined.

  2. Add cocoa powder, keto friendly sweetener, chia seeds, and xanthan gum. Beat again until the ingredients are mixed.

  3. Put in the refrigerator until the chia seeds have expanded, at least a couple of hours.

  4. Serve and enjoy!
