Sweet & Salty Crunchy Kale Salad

Ingredients

For the dressing

  • ⅓ cup chopped almonds

  • ½ cup chopped onion

  • ½ cup apple cider vinegar

  • ½ cup avocado or olive oil

  • ½ cup brown keto-friendly sweetener (erythritol or monk fruit)

  • ½ teaspoon pink salt

  • ¼ teaspoon black pepper

    For the salad

  • 1 (12 oz) bag of kale (fits in a 5-quart bowl)

Instructions

  1. In a large measuring cup, add all the dressing ingredients and mix thoroughly until well combined.

  2. In a large bowl, add the kale and slowly pour the dressing over it while mixing thoroughly to coat evenly.

  3. Serve and enjoy!
