Sweet & Salty Almond-Breaded Chicken

Ingredients

  • 1 cup crushed almonds

  • 1 beaten egg

  • 1 to 2 lb chicken, cut into cubes

  • 2 tablespoons brown keto-friendly sweetener (stevia, erythritol, monk fruit, allulose, or a combination)

  • 1 ½ teaspoons pink salt

  • ½ teaspoon ground ginger

  • ½ teaspoon granulated garlic

Instructions

  1. In a bowl, mix the crushed almonds, brown keto-friendly sweetener, pink salt, ground ginger, and granulated garlic.

  2. Prepare a baking tray with parchment paper or a silicone mat.

  3. Take one piece of chicken, dip it in the beaten egg, then coat it with the dry mixture. Repeat this step with the remaining chicken cubes and place them on the tray.

  4. Bake for approximately 18 minutes, until the chicken is fully cooked.

  5. Serve and enjoy!
