Cheese Muffins

Ingredients

  • 2 eggs

  • 6 Tbsp butter melted

  • ½ to ¾ cup powdered keto friendly sweetener (Stevia, erythritol, nun fruit, allulose or combination) depending on how sweet you want them

  • 2 and ½ cups almond flour

  • 2 tsp baking powder

  • 1 cup sour cream

  • 2 cups grated cheese (I used cheddar)

Instructions

  1. Preheat your oven to 350˚F.

  2. In a bowl, beat the eggs, melted butter and keto friendly sweetener. Mix until all ingredients are well-combined.

  3. Add the almond flour and baking powder and until well-combined.

  4. Add sour cream and grated cheese. Stir to combine.

  5. Prepare your muffin pan (I used mini and regular) (grease with coconut oil, avocado or butter if necessary or use parchment paper muffin tinsand pour the mixture into the compartments; filling ½ to ¾ full.

  6. Bake for 15 to 18 minutes, or until golden brown.

  7. Serve and enjoy!
