Sweet Chia Egg Bites

Ingredients

Base

  • 4 eggs

  • 4 oz cream cheese

  • 1 cup shredded mozzarella cheese

  • 2 tablespoons chia seeds

  • 1/4 teaspoon pink salt

Flavors (per 1/2 cup base batch)

  • Blueberry: 1 teaspoon sweetener, 12 fresh blueberries (2 per mold)

  • Cinnamon: 1 teaspoon sweetener, 1/8 teaspoon cinnamon (plus a pinch for topping)

  • Cardamom: 1 teaspoon sweetener, 1/8 teaspoon ground cardamom

  • Chocolate: 2 teaspoons sweetener, 1 teaspoon 100% cacao powder

Optional Topping

  • Granulated sweetener for dusting before baking

Instructions

  1. Preheat oven to 350°F (175°C). Prepare two 12-cup mini silicone muffin pans.

  2. Add eggs, cream cheese, mozzarella cheese, chia seeds, and pink salt to a blender. Blend until smooth to create the base batter.

  3. Divide batter into four 1/2 cup portions (or blend in individual batches) to mix the flavors:

  • Blueberry: Blend 1/2 cup base with 1 teaspoon sweetener. Place 2 blueberries into each of 6 mini muffin cups and pour batter over top.

  • Cinnamon: Blend 1/2 cup base with 1 teaspoon sweetener and 1/8 teaspoon cinnamon. Pour into 6 mini muffin cups and sprinkle top lightly with cinnamon.

  • Cardamom: Blend 1/2 cup base with 1 teaspoon sweetener and 1/8 teaspoon cardamom. Pour into 6 mini muffin cups.

  • Chocolate: Blend 1/2 cup base with 2 teaspoons sweetener and 1 teaspoon cacao powder. Pour into 6 mini muffin cups.

  1. Sprinkle a light dusting of sweetener over all filled muffin cups, if desired.

  2. Bake at 350°F for 18 to 25 minutes until set and light golden brown on the bottom and sides. Allow to cool before serving (bites will deflate slightly as they cool).
