Shrimp and Cauliflower Rice in a Red Sauce
Ingredients
3 tomatoes
1 red bell pepper
500 g cauliflower rice (or two 10–12 oz packages)
2 tablespoons heavy cream
1 teaspoon garlic powder
1 teaspoon red pepper, or to taste
2 teaspoons pink salt, or to taste
1 pound shrimp
Instructions
1. In a blender, add the tomatoes and bell pepper and blend until smooth.
2. In a skillet over medium heat, melt the butter and add the cauliflower rice. Mix well.
3. Add the red sauce and heavy cream, stirring to combine all the ingredients.
4. Add the shrimp and mix with the other ingredients. Cook until the shrimp are done, or just heated through if already cooked.
5. Serve and enjoy!
