Cinnamon Roll Cottage Cheese Pastry

Ingredients

For the bread

  • 2 eggs

  • 1 cup cottage cheese

  • 1 teaspoon ground cinnamon

  • 2 tablespoons keto-friendly sweetener (stevia, erythritol, monk fruit, or a combination)

For the frosting

  • 2 oz cream cheese

  • 1 teaspoon heavy cream

  • 2 tablespoons keto-friendly sweetener (stevia, erythritol, monk fruit, or a combination)

  • 2 tablespoons brown keto-friendly sweetener (stevia, erythritol, monk fruit, or a combination)

Instructions

For the bread

  • Preheat the oven to 350°F.

  • Blend the cottage cheese with the eggs until fully combined.

  • Line a baking sheet with parchment paper and pour the mixture, spreading it evenly into a rectangle.

  • Bake for 25–35 minutes until golden on both sides.

  • Remove and let cool.

For the frosting and assembly

  1. In a bowl, add the frosting ingredients and mix well until smooth and creamy.

  2. Take the bread and cut it into strips, not too thin or too thick.

  3. Spread or drizzle the frosting over the bread, making sure to cover it completely.

  4. Roll up the strips to form small rolls, and if desired, add extra frosting on top for more sweetness.

  5. Serve and enjoy!
