Lime Cucumber, Pepper, and Strawberry Salad

Ingredients

  • 4 cups chopped cucumbers

  • 3 chopped bell peppers (any color)

  • 1 cup chopped strawberries

  • Juice of 2 green limes

  • 2 teaspoons apple cider vinegar

  • 4 teaspoons keto-friendly sweetener (Stevia, erythritol, monk fruit, or a combination)

  • ½ teaspoon pink salt or to taste

  • Cubed or sliced cheese (optional, to taste)

Instructions

  1. In a bowl, mix the chopped cucumbers, bell peppers, and strawberries.

  2. Pour in the lime juice and stir to combine with the other ingredients.

  3. Add the apple cider vinegar and mix well with the other ingredients.

  4. Add the keto-friendly sweetener, 1 teaspoon at a time, while mixing with the other ingredients.

  5. Add the pink salt and mix again. Store in the refrigerator for a while to allow the flavors to blend and to serve chilled.

  6. You may add the cubed or sliced cheese as an optional step.

  7. Serve and enjoy!
