Cucumber Coleslaw

Ingredients

  • 3 ½ cups chopped cabbage

  • 2 ½ cups chopped cucumber

  • ½ cup sour cream

  • 2 tablespoons heavy cream

  • 2 tablespoons apple cider vinegar

  • ¼ cup yellow lemon juice

  • ½ cup brown keto-friendly sweetener (Stevia, erythritol, monk fruit, allulose, or a combination, or white if brown is not available)

  • ¼ teaspoon pink salt

  • ⅛ teaspoon black pepper

Instructions

  1. In a bowl, add the chopped cabbage and cucumber and mix until well combined.

  2. Add the sour cream and mix the ingredients.

  3. Add the heavy cream, apple cider vinegar, and yellow lemon juice. Mix well.

  4. Add the brown keto-friendly sweetener to the bowl and stir to combine well.

  5. Add the pink salt and black pepper. Mix well.

  6. Serve and enjoy!
