Coconut Flax Cookies
Ingredients
½ cup melted butter
1 cup keto-friendly granulated sweetener (¾ cup if you prefer less sweet)
½ cup keto-friendly brown sweetener
1 teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon ground cinnamon
¼ teaspoon ground cloves
1 teaspoon vanilla extract
2 beaten eggs
2 cups almond flour
½ cup unsweetened shredded coconut
½ cup ground flaxseed
Instructions
Preheat your oven to 375°F.
In a bowl, combine the melted butter, granulated sweetener, and brown sweetener. Beat until well combined.
Add the baking powder and baking soda, mixing until incorporated.
Add the ground cinnamon and ground cloves, stirring until combined.
Add the beaten eggs and mix with the other ingredients.
Add 1 cup of almond flour and mix until well combined.
Add the shredded coconut and ground flaxseed, and mix thoroughly.
Add the remaining almond flour and mix again until a dough forms.
Line a baking sheet with parchment paper. Take a portion of the dough and shape it into a cookie. Repeat this step to form all the cookies.
Bake for 8 to 10 minutes, keeping an eye on them to avoid burning. They should be golden on the bottom to ensure the center bakes properly.
Once out of the oven, let the cookies cool before moving them.
