Cinnamon Cacao Crepes
Ingredients
8 oz cream cheese
8 eggs
2 teaspoon cinnamon
2 teaspoon cacao
½ cup plus 2 tablespoon sweetener (stevia, erythritol, monk fruit, allulose, or a combination)
Coconut oil (or butter) for the pan
Instructions
In a bowl, combine the cream cheese, eggs, cinnamon, cacao, and sweetener. Mix well until everything is blended. For easier mixing, you may use a blender to achieve a smoother consistency.
Heat a pan over low heat with a little coconut oil or butter. Pour a small amount of the mixture into the pan, keeping in mind that crepes should be thin, so you don’t need to use much batter.
Cook for a few minutes until the top looks set, then flip to cook the other side.
Repeat the process to make the remaining crepes.
