Cinnamon Cacao Crepes

My Cinnamon Cacao Crepes are a perfect combination of flavors for that high-protein, low-carb breakfast that can even be eaten without anything else. They are so simple to make that Xariya has been making them for years! Eat it with a low-glycemic syrup, my strawberry chia seed jam (link), peanut or almond butter, powdered low-glycemic sweetener, or just good ‘ole butter! 

Ingredients

  • 8 oz cream cheese

  • 8 eggs

  • 2 teaspoon cinnamon

  • 2 teaspoon cacao

  • ½ cup plus 2 tablespoon sweetener (stevia, erythritol, monk fruit, allulose, or a combination)

  • Coconut oil (or butter) for the pan

Instructions

  1. In a bowl, combine the cream cheese, eggs, cinnamon, cacao, and sweetener. Mix well until everything is blended. For easier mixing, you may use a blender to achieve a smoother consistency.

  2. Heat a pan over low heat with a little coconut oil or butter. Pour a small amount of the mixture into the pan, keeping in mind that crepes should be thin, so you don’t need to use much batter.

  3. Cook for a few minutes until the top looks set, then flip to cook the other side.

  4. Repeat the process to make the remaining crepes.

  5. Serve and enjoy!
