Strawberry Chia Seed Jam

My Strawberry Chia Seed Jam is not only delicious but nutritious and won’t spike your blood sugar. It is a guilt free add to your peanut butter sandwich, crepes, pancakes, waffles, in my empanada or even on toast or tortillas (of course one of breads or tortillas makes it ideal)! 

Ingredients

  • 3 cups strawberry purée (blend strawberries with a little water)

  • ¾ cup keto-friendly powdered sweetener (Stevia, erythritol, monk fruit, allulose, or a combination)

  • 6 to 7 tablespoons chia seeds

Instructions

  1. In a saucepan, heat the strawberry purée over medium heat.

  2. Add the keto-friendly powdered sweetener and chia seeds.

  3. Let it cook for about 15 minutes, until the chia seeds expand and the mixture reaches a jam-like consistency.

  4. Enjoy!
