Christmas Colored Beef and Veggie Stirfry
Ingredients
2 pounds ground beef
1 can (14.5 oz) peeled tomatoes or 2 cups peeled tomatoes
1 white onion, diced
2 green bell peppers, cut into medium squares
4 cups zucchini, cut into small triangles
1 tablespoon avocado oil
2 cups spinach
1 tablespoon dried cilantro
2 teaspoons pink salt, then to taste
2 teaspoons garlic powder
1 teaspoon cumin
½ teaspoon paprika
Instructions
In a large skillet, cook the ground beef over low heat and add the peeled tomatoes.
Add the onion and bell peppers and mix everything very well.
Add the zucchini and make sure to mix everything thoroughly.
Add the oil and spinach, mixing together with the rest of the ingredients while everything cooks well.
Add all the spices, making sure to stir well until everything is fully combined.
Adjust salt to taste if necessary.
Serve and enjoy!
