Chocolate Coconut Pecan Bites

Ingredients

  • ¼ cup melted butter

  • 2 eggs

  • 6 tablespoons keto-friendly powdered sweetener (Stevia, erythritol, monk fruit, allulose, or a blend)

  • ¼ cup keto-friendly brown sweetener (Stevia, erythritol, monk fruit, allulose, or a blend)

  • ¼ cup chopped nuts

  • ¼ cup unsweetened shredded coconut

  • ¼ cup almond flour

  • ¼ cup cocoa powder

  • 2 teaspoons baking powder

  • Avocado or coconut oil for greasing the molds

Instructions

  1. Preheat your oven to 350°F (175°C).

  2. In a bowl, beat the eggs with the melted butter.

  3. Add the powdered keto sweetener and brown keto sweetener. Mix well with the other ingredients.

  4. Add the chopped nuts, shredded coconut, and almond flour. Mix until well combined.

  5. Add the cocoa powder and baking powder. Stir until the ingredients are thoroughly mixed.

  6. Prepare a muffin tin greased with avocado oil.

  7. Pour a portion of the batter into each compartment of the tin and bake for 15 to 20 minutes, or until a knife comes out clean.

  8. Serve and enjoy!
