Breakfast Fried Rice

Ingredients

  • 3 Tbsp of butter

  • 1 onion diced or 1 tsp onion powder

  • 1 tsp garlic powder or 1 Tbs minced garlic or 6 cloves of garlic

  • 8 strips of bacon cut into small pieces

  • 3 cups cauliflower rice (2 packs)

  • 12 small uncured sausages, cut up (no nitrites)

  • 14.5 oz chopped tomatoes (without water) (or 4 Roma tomatoes)

  • 8 beaten eggs

  • 2.5 tsp pink salt or to taste

  • 2 tsp black pepper 

  • 4 cups packed spinach

  • Dried red pepper, cayenne pepper,jalapenos or other hot chilies to taste

Instructions

  1. In a large frying pan, melt the butter together with the chopped onion and granulated garlic.

  2. Add the chopped tomato,and let it sauté until there is no water.

  3. Add and mix in the cut sausages and bacon.

  4. Add the previously cooked cauliflower rice to the pan and mix with the other ingredients.Add pink salt and black pepper. Stir to combine.

  5. Add and mix the spinach, cooking it until it is reduced in size.

  6. Add the beaten eggs, mix until cooked.

  7. Serve and enjoy!
