Banana Muffins

Ingredients

  • 5 tablespoons melted butter

  • 2 beaten eggs

  • 1 cup keto-friendly sweetener (stevia, erythritol, allulose, monk fruit, or a combination)

  • ¼ cup heavy cream

  • ¼ cup almond milk

  • ½ teaspoon vanilla extract

  • 1 to 2 teaspoons banana extract (depending on how strong you want the flavor)

  • ½ cup ground flaxseed

  • 2 cups almond flour

  • 3 teaspoons pink salt or to taste

Instructions

  1. In a bowl, pour in the melted butter and beaten eggs, and mix very well.

  2. Add the sweetener and continue beating.

  3. Add the heavy cream, almond milk, vanilla extract, and banana extract, and mix everything thoroughly.

  4. Add the almond flour and mix until well incorporated.

  5. Add the salt and mix everything very well.

  6. Pour small portions into a pancake or muffin mold.

  7. Bake at 350°F for 25 minutes until done.

  8. Serve and enjoy!
