Spiced Trilogy Cookies
Ingredients
3 tablespoons butter, melted
1 egg
1/2 teaspoon vanilla extract
3 tablespoons brown sweetener (such as Allulose Swerve)
2 tablespoons granulated sweetener (such as Impact Allulose Monk Fruit)
2 tablespoons seed trilogy mix (equal parts hemp hearts, chia seeds, and whole flax seeds)
1 1/4 cups almond flour
1/4 teaspoon pink salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon ground cloves
1/2 teaspoon baking powder
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a bowl, whisk together the melted butter and egg.
Add the vanilla extract, brown sweetener, and granulated sweetener, and mix well.
Stir in the seed trilogy mix and let it sit for a few minutes so the chia seeds begin to absorb liquid and expand.
In a separate bowl, combine the almond flour, pink salt, cinnamon, nutmeg, ground cloves, and baking powder.
Add the dry ingredients to the wet mixture and stir thoroughly until a uniform cookie dough forms.
Drop spoonfuls of dough onto the prepared baking sheet and gently flatten each one with your fingers or a spoon.
Bake for 10 to 13 minutes until the cookies are set and lightly golden. Let them rest on the baking sheet for about 5 minutes before removing to allow them to firm up completely. Enjoy!
