Pumpkin Spice Sweet Bread
Ingredients
4 tablespoons butter, melted
1/4 cup brown sweetener (such as Allulose Swerve or Lakanto)
4 teaspoons granulated sweetener (such as Allulose Monk Fruit)
4 eggs
1/2 cup seed trilogy mix (equal parts hemp hearts, chia seeds, and whole flax seeds)
1 cup almond flour
1 teaspoon baking powder
1/4 teaspoon baking soda
2 teaspoons pumpkin spice mix
Pinch of pink salt (if using unsalted butter)
Instructions
Preheat oven to 350°F (175°C) and line a large baking sheet with parchment paper.
In a large bowl, whisk together the melted butter, brown sweetener, and granulated sweetener until fully combined.
Beat in the eggs one at a time until smooth.
Stir in the seed trilogy mix (hemp hearts, chia seeds, and flax seeds). Let the mixture sit for a few minutes so the chia seeds can absorb the liquid and expand.
In a separate bowl, combine the almond flour, baking powder, baking soda, pumpkin spice mix, and pink salt.
Add the dry ingredients to the liquid seed mixture and stir thoroughly until a uniform batter forms. Let the batter rest for 10 minutes to thicken.
Pour the thickened batter onto the center of the parchment-lined baking sheet. Using a spatula, spread it evenly into a large rectangle about 1/2 inch thick.
Bake for 14 to 18 minutes, or until the center is set and no longer wet.
Remove from the oven and let rest on the baking sheet for at least 10 minutes to allow the seeds to fully set before slicing into bread portions.
