Minestrone Chili
Ingredients
1 tablespoon avocado oil
1 tablespoon minced garlic (6 garlic cloves)
1 medium chopped onion
1.5 pounds ground beef
8 cups water
3 cups chopped celery
6 cups diced eggplant
1 can diced tomatoes
1 teaspoon paprika
1 teaspoon black pepper
2 tablespoons pink salt
1 to 3 tablespoons chili powder
¼ cup dried parsley
Keto-friendly sweetener to taste (stevia, erythritol, monk fruit, or a combination)
Grated cheese (optional for serving)
Instructions
PIn a skillet, add the avocado oil and garlic. Sauté for 1 minute.
Add the ground beef and onion to the skillet and cook until the beef is fully cooked.
While the meat is cooking, bring the water to a boil in a large pot and add all the cooked meat to the water.
Add the celery, eggplant, and tomatoes to the pot.
Add the paprika, black pepper, pink salt, chili powder, dried parsley, and keto-friendly sweetener. Stir until well combined.
Let the soup come to a boil, then reduce the heat to medium. Let it simmer for another 10 minutes.
Serve with grated cheese and/or dried red peppers (optional) and enjoy!
