Low-Carb BBQ Sauce
Ingredients
2 Roma tomatoes
2 tablespoons water (for stewing tomatoes)
2 tablespoons white wine vinegar (or apple cider vinegar / white vinegar)
2 tablespoons brown sweetener (such as brown Allulose or Swerve brown)
1 tablespoon granulated white sweetener (such as Allulose monk fruit blend)
1 teaspoon paprika
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon pink salt
¼ teaspoon black pepper
Cayenne pepper (optional, to taste for heat)
¼ teaspoon xanthan gum (optional, for extra thickness)
2 tablespoons mayonnaise (optional, for a creamier texture)
Instructions
Place the Roma tomatoes and 2 tablespoons of water in a pan over medium heat. Stew for about 10 minutes until the tomatoes soften and the water evaporates.
Transfer the stewed tomatoes to a blender and puree until smooth.
Pour the tomato puree back into the pan over medium heat.
Stir in the vinegar, brown sweetener, and white sweetener, mixing well until combined.
Add the paprika, garlic powder, onion powder, pink salt, black pepper, and cayenne pepper (if using).
If a thicker or creamier sauce is preferred, whisk in the xanthan gum or mayonnaise.
Simmer for a few minutes to allow all the flavors to meld and the sauce to thicken.
Remove from heat, let cool slightly, and serve alongside your favorite proteins or meals. Enjoy!
