Kix Sweet Bread

One of my favorite cereals growing up was Kix. It was lower in sugar than others, and I loved the taste. So when I first created this bread, it took me back to my childhood; and when my parents tried it, they agreed. It’s soft, sweet, and perfect alongside any meal or with coffee or tea. You can even add my Strawberry Chia Seed Jam (link this) or simply butter, peanut or almond butter, or cream cheese if you’d like. 

Ingredients

  • 1 egg white

  • 1 Tbs keto friendly sweetener (stevia, erythritol, allulose, nun fruit, or combination)

  • 1 Tbs coconut flour

  • 2 Tbs almond flour

  • ¼ tsp baking powder

Instructions

  1. In a bowl, mix the egg white very well with the keto friendly sweetener.

  2. Add a tablespoon of coconut flour and continue mixing until well combined.

  3. Add the almond flour to form a soft dough.

  4. Finally add the yeast and mix evenly.

  5. On a hot griddle, place the dough in the shape of a tummy and wait for it to brown, when doing so turn it over so that it browns on the other side.

  6. Serve and Enjoy!
