High-Protein, Low-Carb Oatmeal

Ingredients

  • 1 ½ cups almond milk

  • ¼ cup ground flaxseed

  • ¼ cup coconut flour

  • 2 beaten eggs

  • 2 tablespoons heavy cream

  • 2 tablespoons butter

  • ¼ teaspoon pink salt

  • 2 tablespoons brown-friendly keto sweetener (Stevia, erythritol, monk fruit, or a combination)

  • 1 tablespoon maple syrup extract, to taste

     

    Instructions

    1.    In a pot, heat the almond milk.

    2.    Add the ground flaxseed and coconut flour. Stir to mix the ingredients, making sure there are no lumps.

    3.    Remove the pot from the heat and add the beaten eggs while whisking until well combined. Then return to low heat and keep stirring until it thickens.

    4.    Add the heavy cream and butter. Stir until the butter is melted.

    5.    Add the brown-friendly keto sweetener and mix with the rest of the ingredients.

    6.    Add the maple syrup extract and stir to combine.

    Serve and enjoy!
