Coffee Fat Bombs

Ingredients

  • ¼ cup coconut oil

  • 1 teaspoon vanilla extract

  • 1 cup almond butter

  • ½ cup cocoa powder

  • ½ cup ground coffee

  • 2 cups unsweetened shredded coconut

  • 1 pinch pink salt

  • 1 cup powdered keto-friendly sweetener (stevia, erythritol, monk fruit, allulose, or a combination)

Instructions

  1. In a bowl, add the coconut oil, ground coffee, cocoa powder, vanilla extract, and pink salt. Microwave for about 30 seconds and stir until it becomes a paste.

  2. Add the almond butter to the paste and stir well to combine.

  3. In a separate large bowl, mix the shredded coconut with the powdered keto-friendly sweetener.

  4. Add the paste mixture to the bowl with the shredded coconut and sweetener, and mix until a dough forms.

  5. With your hands, shape small balls from the dough. Place the balls in the freezer for about 2 hours or overnight, depending on how you prefer to enjoy them.

  6. Optionally, if you want the cookies a little sweeter, you can sprinkle powdered keto-friendly sweetener around them before freezing.
