Coffee Fat Bombs
Ingredients
¼ cup coconut oil
1 teaspoon vanilla extract
1 cup almond butter
½ cup cocoa powder
½ cup ground coffee
2 cups unsweetened shredded coconut
1 pinch pink salt
1 cup powdered keto-friendly sweetener (stevia, erythritol, monk fruit, allulose, or a combination)
Instructions
In a bowl, add the coconut oil, ground coffee, cocoa powder, vanilla extract, and pink salt. Microwave for about 30 seconds and stir until it becomes a paste.
Add the almond butter to the paste and stir well to combine.
In a separate large bowl, mix the shredded coconut with the powdered keto-friendly sweetener.
Add the paste mixture to the bowl with the shredded coconut and sweetener, and mix until a dough forms.
With your hands, shape small balls from the dough. Place the balls in the freezer for about 2 hours or overnight, depending on how you prefer to enjoy them.
Optionally, if you want the cookies a little sweeter, you can sprinkle powdered keto-friendly sweetener around them before freezing.
