“Elotes” with Cauliflower Rice
Have you ever had “Elotes”? It was one of my favorite things to get on the street by the beach when I lived in Chicago. Once I started eating this way, I stopped eating corn, but found that when I created this recipe, it tasted almost exactly like the elotes I was so fond of. My “Elotes” with Cauliflower Rice is a simple side or snack you can make just to your liking, as if you were ordering one off the food cart. I always add cayenne pepper to mine.
Ingredients
½ to 1 cup cauliflower rice
1 tablespoon butter
½ tablespoon mayonnaise
Small handful of shredded cheese to taste
Pink salt to taste
Red pepper to taste (optional)
Instructions
Cook cauliflower rice in the microwave or skillet until heated through evenly.
While still hot, mix the cauliflower rice with the butter until well combined.
Add mayonnaise and stir to mix with the other ingredients.
Add grated cheese and pink salt to taste and mix with the other ingredients.
Serve and enjoy!
