“Elotes” with Cauliflower Rice
Have you ever had “Elotes”? It was one of my favorite things to get on the street by the beach when I lived in Chicago. Once I started eating this way, I stopped eating corn, but found that when I created this recipe, it tasted almost exactly like the elotes I was so fond of. My “Elotes” with Cauliflower Rice is a simple side or snack you can make just to your liking, as if you were ordering one off the food cart. I always add cayenne pepper to mine.
Ingredients
½ to 1 cup cauliflower rice
1 tablespoon butter
½ tablespoon mayonnaise
Small handful of shredded cheese to taste
Pink salt to taste
Red pepper to taste (optional)
Instructions
In a pan, begin cooking the chicken with the butter as it melts.
Add 1 teaspoon of garlic powder, dried oregano, paprika, and pink salt. Mix well and cook until the chicken is fully cooked.
Add the green beans to the pan and stir to mix with the other ingredients.
Add another teaspoon of garlic powder, oregano, paprika, and pink salt. Mix everything well.
Cook until the green beans reach your desired consistency.
