Almond Cookies
Ingredients
½ cup melted butter
¾ cup keto-friendly powdered sweetener (stevia, erythritol, monk fruit, allulose, or a combination)
2 eggs
1 teaspoon almond extract
½ teaspoon baking soda
¼ teaspoon pink salt
3 cups almond flour
Instructions
In a bowl, mix the melted butter with the keto-friendly sweetener until creamy.
Add the eggs one at a time while mixing.
Add the almond extract and mix with the other ingredients.
Add the baking soda, pink salt, and almond flour. Stir until all ingredients are well incorporated and a dough forms.
Divide the dough into equal portions and shape each one into a long log. Then refrigerate for 3 hours.
Cut each log into pieces of your desired thickness.
Prepare a baking sheet with parchment paper and place each piece of dough on top.
Bake at 350°F for 10 to 11 minutes.
