Almond Cookies

Ingredients

  • ½ cup melted butter

  • ¾ cup keto-friendly powdered sweetener (stevia, erythritol, monk fruit, allulose, or a combination)

  • 2 eggs

  • 1 teaspoon almond extract

  • ½ teaspoon baking soda

  • ¼ teaspoon pink salt

  • 3 cups almond flour

Instructions

  1. In a bowl, mix the melted butter with the keto-friendly sweetener until creamy.

  2. Add the eggs one at a time while mixing.

  3. Add the almond extract and mix with the other ingredients.

  4. Add the baking soda, pink salt, and almond flour. Stir until all ingredients are well incorporated and a dough forms.

  5. Divide the dough into equal portions and shape each one into a long log. Then refrigerate for 3 hours.

  6. Cut each log into pieces of your desired thickness.

  7. Prepare a baking sheet with parchment paper and place each piece of dough on top.

  8. Bake at 350°F for 10 to 11 minutes.

  9. Serve and enjoy!
